Mediterranean cauliflower couscous (cherry tomatoes, taggiasche olives and basil)
Ingredients:
small cauliflower
300g of colorful tomatoes
40g of Taggiasca olives
Extra virgin olive oil (to taste)
Fresh basil
Preparation:
In a food processor, blend the cauliflower until it is as small as the couscous, and pour into a bowl.
Chop the tomatoes into four parts and add to the bowl, afterwards, place in the taggiasca olives and season with olive oil. Serve with a few leaves of fresh basil.

Raspberry & Feta Salad

Ingredients:
Two handfuls of mixed salad
125g of raspberries
100g of diced feta
Extra virgin olive oil
Fine salt
Apple vinegar
Preparation:
Season the mixed salad with olive oil, salt and apple vinegar.
Serve on a plate with fresh raspberries and diced feta.

Chocolate Mousse With Fresh Fruit
Ingredients
150g of dark chocolate 75% chopped
½ Cup of water
Fresh Fruit Mix
Preparation:
In a heat resistant bowl, melt the chocolate over a bowl of hot water
Remove the chocolate from the heat, add the water and mix well.
Place the bowl over water and, with an electric beater, beat the chocolate mixture until the foam is formed (it will only take a few minutes).
Serve the chocolate mousse with fresh fruit cut into pieces.
The mousse can be left in the refrigerator for a few days in an enclosed container.

Nana ice cream with blueberries and cocoa beans
Ingredients for 2 people:
3 frozen ripe bananas
125g of fresh blueberries
2 teaspoons of cocoa beans
Preparation:
Cut the bananas into chunks and place them into the blender, followed by the blueberries.
Blend everything until a smooth and creamy texture is obtained.
Serve immediately with a sprinkle of cocoa beans.
